So I ordered a SX a couple months back. What should I be asking my dealer when i check in on the vehicle's build progress?

So you basically just placed a deposit guaranteeing your spot in line behind other customers who want the same SX trim level.
Your order becomes real when the Kia Forward Ordering System (KFOS) picks up your order. This happens when you're next in line and the Telly you spec'd out on an order form gets entered into the system by your dealer and made official by KMMG in West Point, Georgia.
Then, and only then does your order get built.
Kia will post your official window sticker with your Telly's
VIN and all the options/accessories that could be added at the time.
FYI: I asked for the works, loaded with options/accessories and all I got were the OEM factory-installed tow hitch receiver, self-leveling rear shock absorbers + OEM Carpeted
Floor Mats on the sticker because a bunch of options I wanted were not available at the time of order.
OEM Illuminated Scuff Plates were not available to my dealer the whole time I was waiting for my order.
The OEM Carpeted Cargo Mat with Seat Back Protection, the OEM Cargo Cover, the OEM All Weather
Floor Mats and even the Telly wheel locks I had to order through the Parts Department.
The prices were pretty close for every item, but if you can get the OEM Cargo Cover from the factory, the price difference was about $100 for me but whatever, it's still worth the over $200+ that paid for it.
Ask your dealer/salesperson/sales manager where you are in line, and how things are looking.
Ask them when they think you'll get to the front of the line.
How many allocations did they receive from KMMG the last month, this month? How many estimated allocations they'll get for the next month?
You know this already but AWD is in high demand.
You'll typically wait the longest for AWD Telly SX with the classic Prestige Package (non-Nightfall) with the "Tow Package" and other factory-installed options.
If you're FWD or NFE, you might move along faster or be offered a similar vehicle that someone else put a deposit on, car delivered, and the owner passed because the wife or kids or dog don't like the NFE or exterior color or rims or whatever.
I got offered a NFE that another customer passed on, but I wanted what I wanted and I waited 3.5 months for my perfect Telly. Happy that I did
