Perhaps it is only annoying to me, but I finally figured out how to disable my iTunes music (because it's a lot of music from when my kids were in middle school about 10 years ago) in CarPlay. I use CarPlay for Spotify & Waze so Weird Al Yankovic & Black Eyed Peas blaring was very frustrating. Anyway, here's what I did to stop iTunes from automatically starting when connected. From my iPhone Xs, settings>music>show Apple Music toggle off. I was never able to find this info by googling and stumbled upon this easy fix. Hope this quick fix is helpful.

Oh. My. God. Thank you sooooo much. I’ve been struggling with this for 3 years with my minivan trying to figure out how to not have it start playing every song my sister bought in high school whenever the car turned on.
