Are you using the VIN lookup Tool? If so, I'd take a wild guess and say it's a day behind so when you look up on a Tuesday, it is showing Monday's numbers.

Keep in mind it's not really production anyway. It's simply the date the VIN is scraped from Kia's website. That can vary for many reasons. When it's working, it generally reflects production well. All the gritty details are in the VIN lookup site threads.
